Crusted Pumpkin Wedges


I promise...
This will be my last pumpkin/squash base recipe
... for this season anyway



Crusted Pumpkin Wedges

1/2 pumpkin (approx. 300g with skin on)
  1/4 cup grated Parmesan
1/4 cup Panko breadcrumbs
1 tsp dried chilli flakes
1 tsp finely chopped thyme
grated zest of 1/2 lemon
a small handful of chopped walnuts
  olive oil
a little sea salt flake and ground black pepper
2 tsp maple syrup


Preheat the oven to 180ºC.  
Cut the pumpkin into slices.
 Lay them, cut side down, 
on a baking sheet that has been lined with greaseproof paper.
Brush the pumpkin generously with olive oil.

To make the crust:
In a small bowl mix together Parmesan, breadcrumbs, 
chilli flakes, thyme and lemon zest.

Coat the wedges with the crust mix, making sure the slices are thickly covered. 
 Season with a sprinkling of sea salt, 
black pepper and a drizzling of maple syrup and a little olive oil.

Roast for about 30 minutes or until the pumpkin is tender.  
If the topping starts to darken too much, cover loosely with foil.

    Its a good source of minerals and fibre,what more the core essentials vitamin.
    Having said that the seeds too is as good as the flesh. My vegan friend cook the sèeds as well.
    I too cook the squash, all varieties last 4 weeks. From masak lemak kale,with leek,cubes of sweet potatoe and pumpkin with udang kering and beef. Then i blend it..into pure.

    And the other half of pumpkin as pengat.. with sweet potatoes.. and daun pandan.

    Also pumpkin,leek, kale, masak air..with daun kunyit .. that also one of the menu.. apart from japanese style.. ie boil with ginger... then eat with thick soya sauce..
    I wld eat with dry pan fry of cod marinate with turmeric and salt. Looks nice taste good.
    Hope aberdeen not too bad now with weather.

    2. Putinski..that is a good one.

      This year weather is harder to predict. London is chaos for union strikes than anytg else.
      But Aberdeen weather can be harsh at times..
