Fluffy Buckwheat and Kefir Pancakes
3/4 cup self-raising flour
1/4 cup buckwheat flour
1/2 tsp baking powder
1/2 tsp baking soda
a pinch of salt
1 large egg
1/4 cup kefir
1 cup milk
Sift the flours, baking powder, baking soda and salt into a large bowl.
In a separate bowl, lightly whisk together egg, kefir and milk.
Pour the milk mixture into the flour mixture and mix until the batter is just combined.
Let the batter stand for at least 30 minutes.
Heat a large nonstick skillet over medium-low heat and add a knob of butter.
Once melted, add a ladle of batter.
Wait until the top of the pancake begins to bubble, then turn it over
and cook until both sides are golden brown.
Repeat until all the batter is finish.
Serve warm with butter, maple syrup and fresh fruits
